Chocolate Covered Strawberry Chaffles

Chocolate Covered Strawberry Chaffles

Yields 3+ mini waffles or 1 Belgian style waffle

Ingredients

  • 2 large eggs
  • 1 tablespoon heavy whipping cream divided
  • 2 ounces cream cheese softened
  • 1 teaspoon vanilla extract you can replace this with a strawberry extract or flavoring to give the batter a stronger strawberry flavor
  • 1 tablespoon monk-fruit sweetener you can replace with the granular sweetener or your choice
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • ¼ cup unsweetened cocoa powder
  • ¾ cup mozzarella cheese shredded
  • ¼ cup strawberries diced
  • ¼ cup Lily’s chocolate chips + optional 1 tablespoon for garnish
  • Optional 1 tablespoon Swerve confectioner’s sugar for topping

Instructions

  • Preheat waffle maker to medium/high heat and grease, generously.
  • In a medium mixing bowl, add cream cheese, eggs, whipping cream, extract or flavoring, and sweetener.
  • Using a hand mixer, beat until thoroughly mixed.
  • In a small mixing bowl, add flour, baking soda, and cocoa powder. Whisk until combined.
  • Add flour mixture to egg mixture and stir until combined.
  • Add in strawberries and mozzarella and mix well, then fold in chocolate chips.
  • Add to waffle maker
  • For mini waffles: Scoop ¼ cup of batter into waffle maker and cook for 2+ minutes or until done.
  • For Belgian waffle, pour entire bowl of batter into the waffle maker or until full, then cook on medium-high for 4+ minutes or until done.
  • Top with optional toppings like Swerve confectioner’s sugar, diced or sliced strawberries, or melted Lily’s chocolate chips.

How To Organize your Work at Home Day.

If you are already working from home then you are pretty aware of all the benefits that come from being your own boss. The benefits go far beyond just the flexibility of setting your own hours, as you get more family time and time to focus on what you enjoy doing in life. Now that you are working from home and reaping the benefits from that chosen career path, it’s time to learn how to organize your work at home day so that you can continue enjoying the work at home benefits. 

While everyone works differently, there is a common key method to organizing your work at home day that stands true across the board, while reviewing the tips shared below, please think about how each will benefit you or not benefit you and proceed with implementing only the most beneficial options for your work at home mindset:

  • Maintain Regular Work Hours – set a consistent work schedule, and stick to it! Seriously, this is the number one area where people go from work at home success to work at home failure. Know what hours you will be able to stick firm with and set those hours in place. 
  • Take Legitimate Breaks – just as you would at an outside-of-the-home job, be sure to take legitimate breaks throughout your work at home day. This includes taking a lunch break as well as two fifteen minute breaks, so as long as you are putting in an average 8 hour work day.
  • Have Dedicated Work Equipment – this means all equipment you need and have for working from home must be solely used for work at home purposes only. Do not allow your kids to play on your work computer, printer or any other device dedicated to your business. 
  • Set Deadlines – always work with deadlines, this keeps you held accountable and on track throughout your day. The best way to set deadlines is to start each day with a list of tasks you must complete in level of priority, so you end your work at home day feeling accomplished. 
  • Set Boundaries with Family – always, always, always maintain a proper boundary with family when work time is in place, you may be home to spend more time with them but if you are not staying dedicated to work during your work hours you won’t be successful. 

It is great to have the luxury of working from home and it can be quite lucrative for many, the key is to find a way to use some of the tips to organize your work at home day listed above in a suitable format for your own work at home success.

Let’s get creative – you can get romantic!


Enjoy a scenic drive together.

Get in the car and drive into the sunset together! You don’t have to have a destination in mind, go for a ride. It’s always nice just to simply get some fresh air, play a silly car game and JUST drive.

Go stargazing

Find a beautiful spot with a good view of the sky and look at the stars! They are so beautiful, and it doesn’t cost a thing! You can even bring a small picnic or a blanket to make it even cozier.

Have an at-home wine tasting.

Have a bunch of wine at home? Make your own at-home wine tasting! Pour a few glasses of wine and guess what kind of wine it is! You can even do a beer tasting too! 🙂 Want to make it more fun? Blind fold & guess!

Enjoy a picnic in your backyard or even drive way.

Spread out a blanket and bring some leftovers from the fridge! You don’t have to spend any money, and a change of scenery makes leftovers more fun. Grab those cards or board games as well.

Build a time capsule together

Gather a bunch of your favorite things from the year! Put them in a box and set a date for a few years in the future. Then, make another date to open it! You can get as creative as you want, but it doesn’t have to be extravagant. Also don’t forget how to write y’all didn’t kill each other after going thru this quarantine. (LOL)

Go for a hike or ride your bikes together

Find a hiking trail nearby, and take a stroll together! This is a great way to get outdoors and spend some quality time together. Carl and I love going on family walks, we sometimes play eye spy or ask each other random questions just to laugh and spice up the discussion.

Camp out in your backyard

Bring your tent and camping supplies to the backyard! Enjoy a fun day of camping without ever having to actually leave the house. Have a fire pit? Make some smores or popcorn – we LOVE using our fire pit!

Make Dinner or Breakfast together.

When Carl and I usually are working a lot, this is something we really enjoy doing together. We try to make breakfast together every Saturday and Sunday, it’s honestly something I look forward to! 🙂

Play spin the bottle

This might sound a little old school, but it can be creative and fun! Place a few fun (and free) activities in a circle. Then, spin the bottle to decide what you’ll do! 😉

Spark Conversation with Questions to Get to Know Each Other Better.

“Would you rather ___ or ____” You can make them super serious or silly. It’s a great way to start a fun conversation and get to know each other better. Some of our best convos happened this way.

Salted Caramel Chocolate Chip Cookies

One thing Carl and I love doing is making cookies! My favorite is caramel & his favorite is chocolate chip. I decided, let’s combine them!

Salted Caramel Chocolate Chip Cookies

Prep Time20 mins
Cook Time15 mins
Rest Time20 mins
Servings: 40 Cookies

Ingredients

  • 1 Cup butter melted
  • ¾ Cup Sugar
  • 1.5 cups Dark brown sugar
  • 2 tsp Vanilla
  • 2 Large eggs
  • 2.5 Cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • ¾ Cup Caramels cut into 4 pieces each
  • 1 Cup Semi sweet chocolate chips
  • ½ tsp kosher salt or coarse sea salt

Instructions

  • Start by unwrapping and cutting the caramels into quarters.
  • Melt butter and place in a large bowl. Add the sugars an
  • d vanilla and using a hand mixer, mix
  • for about 1 minute until well mixed and has become lighter in color.
  • Add the eggs and beat for 1 minute longer.
  • Add the flour and first portion of salt and mix just until it has all come together, about 30 seconds
  • It will look dry at first, but it will come together.
  • Stir in the caramels and chocolate chips. Then place in the fridge for 20 minutes to help the batter firm up.
  • Preheat oven to 350 degrees
  • Line your baking sheets with parchment paper, or spray well with non stick spray. The caramels will stick to the pan as they melt otherwise.
  • Using a 1.5 inch cookie scoop, scoop the cookie dough onto the pans, leaving room to spread, at least 2 inches.
  • If you don’t have a cookie scoop, you can drop by heaping tablespoon.
  • Sparingly sprinkle some of the coarse salt on top of each cookie.
  • Place in the oven and bake 12-15 minutes until cookies are golden.
  • They should still be a bit soft and will continue to set when the cool.
  • Store these in an airtight container at room temperature.

Notes

The caramel in these cookies will become chewy if they are too cold, so it is recommended that if they are stored in the fridge or freezer that they are allowed to come to room temperature before eating. If you want super melty caramel and chocolate, pop them in the microwave for 5 – 10 seconds. Any caramel that melts on the pan will become a bit brittle, but it is still delicious and totally edible. If you feel it will be too salty with the salted tops, you can leave that part out.

How To Host Friendsgiving!

I hosted my first Friendsgiving this year and I believe it was a hit! Below I’ll share what I think helped make it a little more special 🙂

I first headed to Michaels to find some decor to place as the runner on our dining room table. If you go right after Halloween they had all Fall items 80% off! Which was a huge score, this stuff can add up pretty quick in price. My mom and I grabbed two floral garlands and some extra flowers and leaves to place inside! Our final outcome was beautiful:

I picked up our plates, silverware, glass ware, wine glasses, serving utensils from Fortessa! I will link everything here:

Accessories purchased:

I got some items made from Etsy #SupportSmallBusiness and then the rest I needed came from Amazon! I placed everyones name tags on their plates and made sure I sat everyone by people they don’t see very often. I wanted us to all be able to catch up and talk!

Also on their chairs I left some surprises….I did matching PJ sets, a face mask and fuzzy slipper socks. It was a simple but thoughtful touch that was fun for all of us to change into after the fact!

This would also be a fun idea for any holiday / Christmas get togethers!

For food I went a total different route! I ordered take out from our favorite local restaurants. Everything from crab fried rice to chicken wings! I thought it was a nice switch up since I know everyone was going to be having a turkey dinner soon anyways! 🙂 I purchased food from Sense of Thai and Ashburn Pub!

I ordered a cake and cupcakes (they got eaten too fast lol) from two local businesses that we all love. If you’re local I highly recommend them!!

At the end of the day, any get together with friends is important and fun. You don’t need to go all out, grab a pizza and chat!

Instant Bedroom Upgrade – Lighting by LAMPSPLUS

 

Carl and I having been adding final touches to our Master Bedroom and one of the most important ones is….you guessed it, LIGHTING! I was thrilled when Lamps Plus wanted to get collaborate on this project with me. I’ve been looking all over for gorgeous pieces that were affordable. Honestly, I was having a hard time until I went to LampsPlus.com — No joke, I found the lamps I wanted, needed and could afford instantly. I think it took me less than 5 mins. You know how it is, when you find something you love, you just know!

This lamp is called the “Possini Euro Cadence Glass Column Table Lamp” it’s currently on sale for under $120! We put it on my dresser in our Master. It’s great because not only does it fit my style, it had a two pull chain so we can control how much lighting we need. We use this a lot at night when we just want something on in the room that isn’t too bright.

I then needed to find two lamps for our nightstands, Carl is super picky so I was nervous how this was going to go. He didn’t want anything “too girly” — Soon as I showed these to him, he loved them! Winner Winner Chicken Dinner! He’s finally understanding that I can put things together and to trust the process, haha. Anyone else in my shoes? Let’s just say — they completed our Master!!

Wines of Provence x Girls Brunch

Fall is here, but does that mean I’ve stopped drinking rosé? Of course not! It’s time to #fallintorosé! On Saturday, my girlfriends and I spent the afternoon enjoying the two bottles of wine that Wines of Provence sent me: Chateau Vignelaure 2016 and La Grand Vigne (vin de provence) 2016. These wines both hail from Provence, France, the leader of the rosé wine industry. These bottles of rosé lived up to their reputation and made us feel like we were living the elegant yet still casual lifestyle of those in Provence, France, while we were all gathered around, laughing and sipping on some great wine.

I LOVE a good bottle of wine- and both bottles were extremely delicate yet lively on the taste-buds, a combination that typically is tough to do. My girls also agreed. I can tell they liked it by the empty bottles we ended up with! The Provence grapes are different from other areas: the flavors captured are crisper and more refreshing. The Chateau Vignelaure hails from the Coteaux d’Aix-en-Provence, the second largest region characterized by its windy climate and mountains, which helps give the wine its depth in flavor. The La Grand Vigne 2016 comes from the Coteaux Varois en Provence, at a high altitude, providing the wine with a more complex flavor profile.

I am thinking about grabbing a bottle of each (or three) for my Thanksgiving celebration this year, as rosé pairs well with a multitude of foods. However, if you can’t wait that long to try a bottle with friends and family and live that fabulous Provence lifestyle, have a laid-back night in and try some spicy cuisine, such as Moroccan food, as these bottles pair very nicely with spice, bringing out the flavors of both food and wine perfectly.

Not a fan of rosé? Not to fear. Even though Wines of Provence produces 89% rosé wines, the area also has a multitude of reds and whites, both with a tempting fruitiness for any palate.
