Summer is my favorite season! It’s all about fun in the sun, making new memories, maybe even traveling with friends and family. What else do I love about summer? All the fun cookouts and picnics!! I found two of my favorite quick treats to make and you don’t have to go anywhere near a stove. Oh, did I mention they take less than 10 mins to make?! Woo hoo! You’re taste buds are about to party. Below you will find the recipes for Melon Caprese Skewers & Shrimp and Corn Tostadas! Both of these appetizers were found in my June magazine of Women’s Health!
Melon Caprese Skewers
(Per serving 90 cal, 6g fat, 5g carbs, 4g sugar, 146 mh sodium, 0g fiber and 5g protein)
What you will need:
Mini Mozzarella
Fresh Basil (We got ours from the garden!)
Wooden Skewers
Proscuitto
Different types of Melon (I used only cantaloupe)
Fresh Ground Pepper
Make ‘Em:
On each skewer put the following: A mini mozzarella ball wrapped in a basil left, a square of the prosciutto meat, a melon ball & repeat! When you are finished ground some fresh pepper on top!
Shrimp & Corn Tostadas
(Per serving: 42 cal, 3g fat, 4g carbs, 1g sugar, 46 mg sodium, 1g fiber, 2g protein)
What you will need:
1 Avocado
Torilla Chips
Shrimp
Corn
Cilantro
Lime Wedges
1 Chopped Chili
Make ‘Em:
Mash 1 avocado with juice of half a lime; spread on 12 round tortilla chips, and top each with 1 shrimp. Then sprinkle on your desired amount of corn, 1 seeded chopped chili, and 1/2 cup of cilantro leaves used to finish! Now Serve! Try not to eat all of them before you share!
